Utilizing materials that would otherwise be discarded for a variety of reasons
We are particular about the botanicals we use for pickling. Unfortunately, the ingredients that have been discarded from Iki, which is said to be a “treasure trove of ingredients,” are effectively utilized as botanicals with the cooperation of local farmers and agricultural cooperatives.
Marriage with seafood and Japanese cuisine
Iki Retreat Kairi Murakami’s chef’s approval.
Based on shochu from Iki Island, the birthplace of barley shochu, this craft gin is made by soaking Iki botanicals and distilling them again. It goes well with sashimi and other seafood and Japanese food.
A bottle of fine and mellow “strawberry”.
We have increased the percentage of strawberries compared to our previous strawberry-based products, and adopted a process that is new to the Iki no Kura brewery. The result is a bottle with a rich aroma, flavor, and a natural, gentle pink hue, giving it a fine, mellow “strawberry” taste.
