Among these, uni (sea urchin) boasts an overwhelming brand power as a specialty of Iki.<\/p>\n<p>The taste of sea urchin is said to be greatly influenced by the environment in which it grows and the seaweed it feeds on. The Genkai Sea around Iki Island is where the Kuroshio and Oyashio currents meet, creating an environment where high-quality seaweed thrives. In particular, the Iki kelp that sea urchins feed on is incredibly vigorous and rich in nutrients, growing as much as 90cm in a month during its growth period, thanks to the rough waves of the Genkai Sea and the abundant sunlight. Because Iki sea urchins feed on this seaweed, they are characterized by a deep umami and richness, with a lingering aftertaste of that richness in the mouth.<\/p>\n<p>Furthermore, Murasaki Uni, which lives in shallow waters, is still primarily harvested using the traditional method of free-diving by Ama divers.
