Located within the “Cuvée J2 Hôtel Osaka by Onko Chishin” in Nagahoribashi, Osaka (General Manager: Higahiko Sako), AWA SUSHI will debut its new lunch course from Friday, November 1, 2024. This course promises gourmet enthusiasts a luxurious yet casual dining experience, featuring refined Edomae sushi crafted with innovation and seasonal ingredients.

About Chef Ayumi Abe

Born in Fukuoka Prefecture in 1983, Ayumi Abe began her career at a local ryotei and honed her skills in both Western and creative kaiseki cuisine. Driven by a passion to share Japan’s sushi culture with the world, she launched her sushi career at a Michelin-listed sushi restaurant in Tokyo. After leading the Shanghai branch as Head Chef, Ayumi earned acclaim for her authentic Edomae sushi creations. Returning to Japan, she further developed her craft, eventually joining AWA SUSHI as Head Chef in August 2024. Known for her delicate yet bold sensibilities, Chef Ayumi also specializes in pairing sushi with champagne.

Exclusive Collaboration with Otonami for an Extraordinary Experience

In partnership with Otonami, AWA SUSHI invites guests to a unique culinary event where Chef Ayumi Abe will teach guests the art of sushi that pairs perfectly with champagne. With a focus on creating sushi that can be replicated at home, such as boxed sushi, temari sushi, and chirashi sushi, guests can learn techniques for special seasonal dishes. The first event will feature the “mosaic sushi,” a modern take on Osaka’s traditional boxed sushi, perfect for home gatherings. Guests can also enjoy a lunch course of creative Edomae sushi paired with three champagnes, each enhancing the other’s flavors.
